Khao Soi is not a soup. It's a place, a memory, a feeling — in a bowl.
There are dishes that taste good. And then there are dishes that transport you somewhere. Khao Soi belongs to the second category.
I grew up near Chiang Mai. And when I think of home, I don't think of a house or a street — I think of the smell of coconut curry slowly simmering. Of the first spoonful, which is somehow simultaneously creamy, spicy, sour, and sweet. I think of Khao Soi.
“Some smells instantly take you home. This one does too."

What exactly is Khao Soi?
Khao Soi (ข้าวซอย) is a curry noodle dish from northern Thailand — especially from the Lanna region around Chiang Mai. It's not a classic Thai curry and not an ordinary noodle soup. It's both. And more.
The base is a rich coconut broth, deeply seasoned with yellow curry paste, turmeric, and spices that are more reminiscent of the cuisines of Myanmar and Yunnan than of Bangkok. Soft egg noodles swim in it — and on top: crispy fried noodles that provide texture and contrast.
The name "Khao Soi" literally means "cut rice" — a reference to the historical origins of the dish, brought to northern Thailand by Muslim caravan traders along the ancient Silk Road.
The Soul of the Dish: Lanna Cuisine
Lanna — the ancient kingdom of northern Thailand — had its own cuisine long before Bangkok entered the gastronomic scene. Lanna cuisine is deeper, earthier, and more herb and spice-heavy than its southern siblings. It is influenced by trade routes: Burmese, Yunnanese, Indian.
Khao Soi is the perfect distillate of this history. A single bowl contains centuries of cultural exchange, change, and identity.
What makes an authentic Khao Soi?
- Homemade or fresh egg noodles — not dried
- Homemade curry paste with dried chilies, shallots, garlic, and turmeric
- Full-fat coconut milk — no light version
- Tender braised meat (traditionally chicken or beef)
- Pickled mustard greens (Pak Gad Dong)
- Shallots, lime, chili oil for seasoning
- Fried noodles on top — this is not optional
Can you cook Khao Soi at home?
Yes. But it requires the right ingredients. This is precisely where most people fail — not due to a lack of skill, but due to a lack of authenticity. Industrial curry pastes from the supermarket don't come close to the depth of a true Khao Soi.
That's why we've put together everything you need for the OMGBOX Lanna Box: a handmade curry paste directly from Chiang Mai, all the essential ingredients — and instructions that guide you through the process as if you were there.
Why Khao Soi is more than food
Food is memory. It is home. It is the only thing that truly transcends borders — not as a concept, but as an experience. When you eat a bowl of Khao Soi, for a moment you are in Northern Thailand. On a small street food stall stool. With the noise of the marketplace around you.
This is exactly the feeling we want to share with OMGBOX. No tourist merchandise. No generic "Asia box." But something that truly means something.
