What exactly is Khao Soi?
Khao Soi (ข้าวซอย) is a curry noodle dish from Northern Thailand — especially from the Lanna region around Chiang Mai. It's not a classic Thai curry and not an ordinary noodle soup. It's both. And more.
The base is a rich coconut broth, deeply seasoned with yellow curry paste, turmeric, and spices that are more reminiscent of the cuisines of Myanmar and Yunnan than Bangkok. Soft egg noodles float in it — and on top: crispy fried noodles, providing texture and contrast.
The name "Khao Soi" literally means "cut rice" — a nod to the dish's historical origins, brought to Northern Thailand by Muslim caravan traders along the ancient Silk Road.
The Soul of the Dish: Lanna Cuisine
Lanna — the ancient kingdom in Northern Thailand — had its own cuisine long before Bangkok entered the gastronomic stage. Lanna cuisine is deeper, earthier, more herb and spice-laden than its southern siblings. It is shaped by trade routes: Burmese, Yunnanese, Indian.
